Kielbasa and Fried Potatoes

This recipe is a slightly different take on an old favorite. Many people enjoy the flavor of smoked sausage and kielbasa coupled with their favorite side dish or as a stand alone snack. Some people do use kielbasa as an add in to pasta dishes and soups, but just try it with potatoes; cooked in the same pot, of course. The recipe that follows has remained a family favorite of the author for many years.

Ingredients

1 lb kielbasa (sliced into bite sized chunks)

2-3 medium potatoes (peeled, washed and cut into bite sized chunks)

1 TBS chopped onion (minced dried onion works well also)

1 TBS chopped garlic (minced works well also)

3 TBS stick butter

Salt and pepper to taste

Instructions

In a medium to large skillet, melt the butter then add the onion and garlic. After the butter is completely melted then add the potatoes and kielbasa and toss gently to cover with onion/garlic. Add the salt and pepper cook on medium heat until the potatoes begin to brown slightly, turn heat down to low and cover. Simmer, stirring occasionally, for about 20 minutes. Remove the lid and continue cooking until potatoes are done. Note: these instructions are for softer potatoes, if crispy fried potatoes are desired then omit using the lid and stir occasionally until potatoes are done. 

This dish may not exactly be for the health conscious eater, but it is very tasty and quick to prepare. You can omit the butter and use 1 TBS light olive oil, but it does change the flavor. 

This is a wonderful dish to take to a cook out, picnic and other social gatherings where you need to bring a dish. It is so good, you can even eat it cold! One of the best ways to eat kielbasa and fried potatoes is with some fresh, homemade bread or biscuits (good for cleaning your plate with). Don’t think that summer time is the best time to fix kielbasa and fried potatoes because it is a welcome treat on chilly Autumn evenings and even when its snowing outside.
